酶蛋白是指酶的纯蛋白部分，是相对于辅酶因子而言，又称为脱辅基酶蛋白，其单独存在时不具有催化活性，与辅酶因子结合形成全酶后才显示催化活性。酶蛋白目前主要的用与饲养业。酶蛋白以植物蛋白为原料，酵母菌为主菌，辅以产酶、产维生素的7种菌进行复合发酵，改善植物蛋白结构，富含消化酶系、菌体蛋白、维生素制作的饲料。可以增强鸡体抵抗力，减少死亡率。用酶蛋白部分或全部替代鱼粉，蛋鸡生产性能、体重、鸡蛋品质等与不替代差异均不显著，还能补充酶系及有益微生物，降低试鸡死亡率，经济效益明显。
