质体（plastid）是一类与碳水化合物的合成与贮藏密切相关的细胞器，它是植物细胞特有的结构。根据色素的不同，质体可分成三种类型： 叶绿体、色质体（或称有色体）和白色体。 质体是植物细胞中由双层膜包裹的一类细胞器的总称，存在于真核植物细胞内。它是绿色植物细胞特有的细胞器，是动植物细胞的三大区别之一，另外两种区别分别是：细胞壁和中央大液泡。（仅限动物界与植物界范围） 质体是真核细胞中具有半自主性的细胞器；质体由两层薄膜包围，可以随细胞的伸长而增大；质体是植物细胞合成代谢中最主要的细胞器。 质体是绿色植物细胞所特有的细胞器，在光学显微镜下容易看到。在幼年细胞中，质体还没有分化成熟，叫前质体。随着细胞的长大，前质体可分化为成熟的质体。根据质体内所含的色素和功能不同，质体可分为叶绿体、有色体和白色体。以上三种类细胞器都是由前质体分化发育而来。
