豆花,在北方叫“豆腐脑儿”,南方叫“水豆腐或豆腐脑”,菜豆花,顾名思义,就是在混有蔬菜的豆腐脑。菜豆花的制作流程简单,选项取上好的黄豆加水泡上一夜,磨成浆,滤去渣,将过滤过的浓浆用大火煮沸,投好切碎的青菜(白菜最好),改为小火慢慢地煮,锅里的豆浆就会慢慢浮起,逐渐与菜一起凝固,这样即可做出美味的菜豆花。
