胃肠激素主要是胃肠黏膜的化学信使细胞分泌的激素，在化学结构上属于肽类，故又称胃肠肽。胃到大肠的黏膜内，有40多种信使细胞，分布在胃肠黏膜细胞之间，可分泌多种胃肠激素。分泌方式有3种，即旁分泌、内分泌和神经分泌。因为胃肠黏膜的面积巨大，胃肠信使细胞的总数超过体内所有内分泌腺的总和，所以胃肠道不仅是体内的消化器官，也是体内最大、最复杂的内分泌器官。
