炸排骨是一道四川省的地方名菜,属于川菜系。外酥里嫩,不硬不软,块块不连,香甜咸淡适口。选新鲜的猪肋条排骨和软骨(每千克骨上带2千克肉)。.剁块及腌制:将排骨剁成3厘米见方的小块,用清水洗净,捞出沥尽水。将葱、姜切成碎末,连同其他佐料倒入容器内混合均匀,再将排骨倒入搅拌均匀,腌制30分钟。上糊、油炸:用清水500克,把淀粉、面粉、鸡蛋搅成干糊状。将腌制过的排骨连同佐料一起倒入糊内,用木棒搅匀。把油加热到180℃,倒入排骨,注意炸匀,约10分钟后,排骨表面呈深黄色捞出,即为成品。
