擦 片 红面350克，白面100克，豆面50克，温水300克。 1．将三种面粉同时放入盆内调匀，加入温水，和成面团，揉匀揉光，盖湿洁布稍饧。 2．将擦片床平放在开水锅沿上，左手把稳床架，—右手揪拳头大一块面团放在擦床上用力反复向前推擦，将面擦入锅内，煮熟即成。 筋滑利口，易消化。 【注】 擦片床是平遥＼介休等地的一种特制炊具，木架中嵌有凸形铁皮，铁皮上布满约2厘米长的扁长孔，面擦入锅内呈小长片状。这种面饭适宜用红面、 玉米面等杂粮混合面制作，食时浇配荤素浇头即可。
