小麦的花排列为复穗状花序，通常称作麦穗。麦穗由穗轴和小穗两部分组成。穗轴直立而不分枝 ，包含许多个节，在每一节上着生1个小穗。小穗包含2枚颖片和3～9朵小花。小麦花为两性花，由1枚外稃、1枚内稃、3枚雄蕊、1枚雌蕊和2枚浆片组成。其外稃因品种不同，有的品种有芒，有的品种无芒。
