凯氏定氮是测定化合物或混合物中总氮量的一种方法。即在有催化剂的条件下,用浓硫酸消化样品将有机氮都转变成无机铵盐,然后在碱性条件下将铵盐转化为氨,随水蒸气蒸馏出来并为过量的硼酸液吸收,再以标准盐酸滴定,就可计算出样品中的氮量。由于蛋白质含氮量比较恒定,可由其氮量计算蛋白质含量,故此法是经典的蛋白质定量方法。
