脍，细切的鱼、肉等食材；“炙”是会意字，亦即是要用字的两个组成部分去体会它的意思。即明火烹饪，指烤肉。古代鲜肉一般用火炙，就像今天的烤羊肉串；干肉则用火烤。“食不厌精，脍不厌细”是粮食越精致越好。肉类切得越细越好。可见古代脍食需要很高的刀工技法。脍炙，是人们所共同喜好的，后来把诗文为人所称颂叫做“脍炙人口”。
