鱼胆即鱼的胆囊。位于鱼类躯干部腹侧。主要用于容纳鱼类肝胰脏分泌的胆汁，起消化作用。 鱼胆的胆汁内所含的氢氰酸毒性比同剂量的砒霜毒性还大，不论生吞、煮熟或泡酒，有毒成分都不会被破坏。 如杀鱼时不小心弄破鱼胆，鱼煮熟后味苦。
