防霉剂系指为防止霉菌滋生的一种添加剂。食品、水果、饲料、化妆品、涂料、粘合剂、皮革、水产品、塑料等在使用及存放期间，易遭霉菌污染，使成品变质。为了防止霉菌滋生，需在产品中加入防霉剂。 防霉剂可分为有机、无机及天然三种。常用的有机防霉剂有：联苯、邻苯基苯酚、2-吡啶硫醇-1-氧化锌等。常用无机防霉剂有：过硫酸铵、磷酸钙、锌离子、银离子、铜离子化合物等。天然防霉剂有：芥子萃取物、艾蒿等。 防霉剂目前已有500余种。用于食品、 水果、饲料、化妆品的防霉剂，要求不得对人畜有害，且有效期长，对霉菌广谱。用于涂料、粘合剂的防霉剂，要求分散性好，有效期长。喷洒或涂刷在卫生间、塑料门窗边缘等处的防霉剂，要求不溶于水，耐气候性好。一般说有机防霉剂较无机防霉剂的防霉能力强。
