银耳多糖(Tremellam)是一种酸性杂多糖，从银耳(Tremella fuciformisBerk)子实体中得到的，其主链结构是由α-(1→3)糖苷键连接的甘露聚糖，支链由葡萄糖醛酸和木糖组成。存在于银耳深层发酵孢子体中的酸性杂多糖，主链结构与上述相似，仅在支链上有所区别。
