酰化又称酰基化，酰化作用，是指在有机分子中的氮、氧、碳或硫等原子上引入脂肪族酰基RCO－或芳香族酰基ArCO－的反应。酰化之后的产物是酮（醛）、酰胺和酯等化合物。按照酰基导入部位可以将酰化反应分为氧酰化、氮酰化和碳酰化反应。酰化试剂一般为羧酸或者是羧酸衍生物，也可以按照酰化试剂的种类将酰化反应进行分类。
