过冷水是这样形成的：是因为水中缺少凝结核，或其它原因，在0℃以下还保持着液态，这样的水叫过冷水。其中过冷水的温度低于饱和温度，饱和水、湿饱和蒸汽、干饱和蒸汽的温度等于饱和温度，过热蒸汽的温度高于饱和温度。区别于上述概念，在工程热力学中，当水温低于饱和温度时（常压下为0摄氏度）称为过冷水。
