辐射食品亦称辐照食品。只用一定量伽马射线、x射线或电子来照射过的食品。采用辐射的方法可消灭食品中的细菌和寄生虫，以达到防腐保鲜的目的。对食品的辐射加工技术于本世纪50年代问世，目前世界上已有35个国家批准了30多种食品的辐射加工标准，其中有21个国家已经进入实际运用阶段。中国辐射食品的研究始于50年代末，目前卫生部已批准对食物、土豆、洋葱、大蒜、苹果、香肠等各种食品的辐射加工暂时规定，并已开始试销部分辐射食品。
