豆腐（拼音：dòu fu）是最常见的豆制品，又称水豆腐。相传为汉朝淮南王刘安发明，也有说关羽、乐毅。主要的生产过程一是制浆，即将大豆制成豆浆；二是凝固成形，即豆浆在热与凝固剂的共同作用下凝固成含有大量水分的凝胶体，即豆腐。 豆腐是中国的传统食品，味美而养生。也是我国素食菜肴的主要原料，在先民记忆中刚开始很难吃，经过不断的改造，逐渐受到人们的欢迎，被人们誉为“植物肉”。豆腐可以常年生产，不受季节限制，因此在蔬菜生产淡季，可以调剂菜肴品种。 传统豆腐有南北豆腐之分，主要是因为制作的时候添加的凝固剂的不同。南豆腐用石膏点制，因凝固的豆腐花含水量较高而质地细嫩，水分含量在90%左右；北豆腐多用卤水或酸浆点制，凝固的豆腐花含水量较少，质地较南豆腐老，水分含量在85%左右，但是由于含水量更少，故而豆腐味更浓，质地更韧，也较容易烹饪。还有一种是添加葡萄糖酸-δ-内酯，称为内酯豆腐。这是一种新型凝固剂，较传统制备方法提高了出品率和产品质量,减少了环境污染。日本名称叫“绢豆腐”，质地明显要比北豆腐和南豆腐嫩滑与细腻。 一般意义上的豆腐多用黄豆、黑豆和花生豆等含蛋白质较高的的豆类制作。也有绿豆豆腐，橡豆腐等等比较另类的豆腐制品，还有的地方会有冻豆腐。
