要素饮食又称元素膳或化学配制膳，是以人体需要量或推荐量为依据，采用包含游离氨基酸、单糖、主要脂肪酸、维生素、无机盐类和微量元素配制成的一种营养齐全，极易消化吸收的无渣饮食。它是一种由纯营养素按配方人工混合而成的粉状物，溶于水后即成为液体或稳定的脂肪悬浮液。其成份不需消化就能在小肠上部吸收，只留些内源性残渣进入大肠。因此，凡不能通过饮食满足机体需要，而尚有部份小肠具有吸收功能的患者，均可用要素饮食来供给全部营养、纠正氮平衡、提高血浆蛋白、增强机体抵抗力、促进患者康复。
