气液界面上由于不溶膜的存在而引起水面电势的变化。若水面上的电势为V0，水面上有不溶膜后的电势为V，表面电势ΔV=(V0－V)，其值可高达几百毫伏的数量级。对于界面上形成的可溶性膜同样存在界面电势。表面电势由测定液体表面和金属探针表面之间的接触电势而得。具体有针电极法和振荡电极法。由表面电势的测定可得到不溶膜是否均匀以及膜上的分子如何排列的有关信息。
