胚芽鞘（coleoptile）为单子叶植物所特有，特别是禾本科植物胚芽外的锥形套状物，是一个鞘状结构。胚芽鞘是植物叶片的保护组织，有保护胚芽中更幼小的叶和生长锥的作用，胚芽鞘还有一个很重要的作用就是顶土能力强，种子在种植的较深的情况下，也能顶土出芽。注：胚芽鞘不是植物的叶片。
