紫罗兰酮（α-Ionone）是一种无色至微黄色液体。呈暖的木香和具有较强的紫罗兰香气。稀释后呈鸢尾根香气，再与乙醇混合，则呈紫罗兰香气。香味比p紫罗兰酮好。沸点237℃，闪点115℃。不溶于水和甘油，溶于乙醇、丙二醇、大多数非挥发性油和矿物油。天然品存在于金合欢油、桂花浸膏等中。主要用以配制龙眼、树莓、黑莓、樱桃、柑橘等型香精。
