糕粉是一种加工粉(又名潮州粉),主要由糯米粉炒熟后磨成的细粉。粉粒松散,一般呈洁白色,吸水力大,遇水即黏连。在制品中呈现软滑带黏状,多应用於广东式点心、月饼和水糕皮等。 糕粉可分现货和自制两种,前者质地比较粗糙,可是应用在料制作时,效果更佳和更适合,后者粉质比较幼细而只适合作粉背之用。
本文就乌贡营养松糕粉的配方、工艺进行了初步探讨。
