甲酸乙酯为允许使用的食用香料，又称蚁酸乙酯，其化学结构上具有活泼羰基和酯基性质，有还原性，能进行酯缩合反应，能混溶于乙醇、乙醚、苯和丙二醇，微溶于矿物油和水（在水中逐渐分解），易燃烧，蒸气可与空气形成爆炸性混合物。不溶于甘油，在碱性中容易水解成游离酸和乙醇。有辛辣的刺激味和菠萝样的果香香气，还有强烈朗姆酒似香气，并略带苦味。
在新的食品标准表2 内增加以下两个MRL 豁免： 当二氧化氯作为杀真菌剂用于水果蔬菜时; 当甲酸乙酯(Ethyl Formate)作为一种采后熏蒸剂用于某些谷物、水 果、油籽及蔬菜时。 注:(*)指出最大残留限量根据或差不多根据分析量化限值制订。
