《现代营养学》是2008年人民卫生出版社出版的图书，作者是荫士安。 该书于1953年首版，当时距最后一个被发现的维生素，也就是维生素B12，被成功分离仅仅数年。现代营养学的定义营养学是关于食物中营养素的性质，分布，代谢作用以及食物摄入不足的后果的一门科学，营养素是指食物中能被吸收及用于增进健康的化学物。饮食营养的目的是通过饮食合理调配，即科学控制能量摄入、使碳水化合物、蛋白质、脂肪的结构合理，又注意各营养素的平衡，维持正常的体重、保证正常生长发育、日常生活工作的营养需要，提高生存质量。
