游离水分又称自由水分。物料中所含的水分超出平衡水分的那一部分。平衡水分是指当物料与空气相接触时，物料表面所产生的蒸气压与空气中水蒸气分压相等时，物料中所含的水分。此时物料中的水分与空气处于动平衡状态。游离水分是能用一般的干燥方法除去。
