渥堆,是普洱茶熟茶制作过程中的发酵工艺,也是决定熟茶品质的关键点,是指将晒青毛茶堆放成一定高度(通常在70CM左右)后洒水,上覆麻布,促进茶叶酵素作用的进行,使之在湿热作用下发酵24小时左右,待茶叶转化到一定的程度后,再摊开来晾干。经过渥堆后的茶叶,随着渥堆程度的差异,颜色已经由绿转黄、栗红、栗黑,在学术上被归类为黑茶类。
