泥蚶，属软体动物门，双壳纲，列齿目，蚶科，蚶属。中国传统的养殖贝类。中国沿海各地均有分布，8~10月份产卵期为生产旺季。此外，河北、山东、浙江、福建、广东均进行人工养殖，产量颇丰。泥蚶肉味鲜美，可鲜食或酒渍，亦可制成干品，蚶肉含多量蛋白质和维生素，蚶血鲜红，肉的边沿有一金丝似的色线。
