旱稻又叫陆稻。由水稻在无水层的旱地条件下长期驯化演变形成的一个生态型作物。适应在旱地栽培，也能在水田或洼地种植，主要分布在夏季雨水稳定但缺乏灌溉条件的旱地、山坡地，或春旱而夏秋易涝的低洼地区。我国南北水稻区都有少量栽培。陆稻的茎、叶粗壮繁茂，叶片较宽，色淡，根系发达，根毛多，根的渗透压和叶片的细胞汁浓度较高，耐早、耐热，吸水力强。产量一般低于水稻，出米率低，米质亦较次。
