挥发油又称精油，英文为 essential oils，是存在于植物中的一类具有芳香气味、可随水蒸气蒸馏出来而又与水不相混溶的挥发性油状成分的总称。挥发油为一混合物，其组份较为复杂。主要通过水蒸气蒸馏法和压榨法制取精油。挥发油成分中以萜类成分多见，另外，尚含有小分子脂肪族化合物和小分子芳香族化合物。
