德氏乳杆菌是一种革兰氏阳性,长杆,无鞭毛,无芽孢,菌落圆形,乳白色,边缘整齐,化能异养性,兼性厌氧,不液化明胶,可利用纤维二糖,果糖,葡萄糖,蔗糖,海藻糖。接触酶阴性,氧化酶阴性,耐酸,喜温,生长温度30-40℃。为德氏乳杆菌作为一种D-乳酸发酵菌种,该菌株可以产较高光学纯度的D-乳酸,但其最佳的发酵温度为37 °C。当培养温度达到40 °C左右时,D-乳酸的产率显著降低。
德氏乳杆菌(Lactobacillus delbrueckii)是工业上常用白勺乳酸消费菌,在医药领域、食操行业有着广泛白勺应用。
