干煸又称煸炒或干炒,是一种较短时间加热成菜的方法,原料经刀工处理后,投入小油量的锅中,中火热油不断翻炒,原料见油不见水汁时,加调味料和辅料继续煸炒,至原料干香滋润而成菜的烹调方法。成菜色黄(或金红)油亮,干香滋润,酥软化渣,无汁醇香的风味特征。
