干烧鱼,是一道四川名肴,以草鱼(或黄鱼、鲤鱼、鲫鱼)为原料,加各种调料烧制而成,颜色红亮、味道咸鲜带辣回甜,是鱼类菜的佼佼者。在烹制其他鱼类菜肴时,如豆瓣鱼、红烧鱼等,鱼成熟装盘后,锅中的汤汁要适量勾入水淀粉,使汁收调,淋在鱼上,达到汁浓味厚的目的。而“干”烧鱼则不同,鱼烧熟装盘后,锅中的鱼汁不用水淀粉收稠,而是把汁继续熬煮,待水分将干,余油吐出时,离火,将汁浇在鱼上,使鱼的口味更加浓厚,这种方法称“自然收稠”,这就是干烧鱼与其他鱼类菜肴烹制时的不同点。
