干烧鱼，是一道四川名肴，以草鱼（或黄鱼、鲤鱼、鲫鱼）为原料，加各种调料烧制而成，颜色红亮、味道咸鲜带辣回甜，是鱼类菜的佼佼者。在烹制其他鱼类菜肴时，如豆瓣鱼、红烧鱼等，鱼成熟装盘后，锅中的汤汁要适量勾入水淀粉，使汁收调，淋在鱼上，达到汁浓味厚的目的。而“干”烧鱼则不同，鱼烧熟装盘后，锅中的鱼汁不用水淀粉收稠，而是把汁继续熬煮，待水分将干，余油吐出时，离火，将汁浇在鱼上，使鱼的口味更加浓厚，这种方法称“自然收稠”，这就是干烧鱼与其他鱼类菜肴烹制时的不同点。
