嗅味（异味）是由水中各种有机与无机物质综合作用而表现出来的，包括土壤颗粒、腐烂的植物、微生物（浮游生物、细菌、真菌等）及各种无机盐（如氯根、硫化物、钙、铁和锰）、有机物和一些气体等等。水中植物在某些微生物（如放线菌、兰绿藻等）作用下所产生的微量有机物（如MIB、土臭素等）也是嗅味的主要来源。
