嗅味(异味)是由水中各种有机与无机物质综合作用而表现出来的,包括土壤颗粒、腐烂的植物、微生物(浮游生物、细菌、真菌等)及各种无机盐(如氯根、硫化物、钙、铁和锰)、有机物和一些气体等等。水中植物在某些微生物(如放线菌、兰绿藻等)作用下所产生的微量有机物(如MIB、土臭素等)也是嗅味的主要来源。
