潮汕出名特产良种鹅——狮头鹅,故卤狮头鹅在潮汕已有很长的历史。鹅的烹制方法各地不同。广州喜欢烧制,而闽南、海丰陆丰一带至今仍以“清煮”为主;潮汕一带,则突出传统卤制特色。
