动物油，即动物油脂，是动物的脂肪，供人类食用的动物油一般来源于猪、牛、鱼等，可用于加工食物，令食物具有肉类的鲜香。佛教中属于荤菜用物。搭配吃油较大的素食，比如茄子、萝卜等，会有令人食欲大开的清甜味道与肉食的风味、大量热量和植物油所没有的营养，促进人体对食材的营养吸收，尤其是维生素。但动物油也有弊端，食用过多会引起一些疾病、不适。部分患病人员要严格控制摄入量，甚至不能食用动物油。
