A process for preparing fresh-keeping ginseng, wherein no brightening agent and chemical preservative containing sulfur are added during preparation. The process comprises the steps of, cleaning and roguing by means of physical method, steam heat scalding, cooling and loading bags, vacuum-packing, sterilizing and disinfecting, thermal insulation examination. The panaxoside content for the fresh-keeping method can be as high as 5.85%.
