排骨面是一道汉族传统面食,在粤菜中尤为著名。属于家常面食,特点是排骨香酥,面条滑润。主料是排骨,面和青菜。排骨洗净去,两面拍松,用酱油、糖、酒、盐、胡椒粉少许。腌约15分钟后沾裹地瓜粉。油烧热,将排骨用中火炸至表面呈金黄后转大火捞出。面煮熟,青菜亦烫熟捞出,置于碗内。面碗内加入葱花、高汤,再加上排骨即可
