缓冲剂是能被用来控制高温高压状态下，或常温常压下，气体或液体逸度的固体组合，它可以是固态的也可以是液态的。化学工程中的缓冲剂常称为酸碱稳定剂，一般是盐类，如强酸弱碱或弱酸强碱盐类，在反应或保存中逐渐释出盐中的酸或碱以保持稳定的酸碱值。
