鲜食玉米是指具有特殊风味和品质的幼嫩玉米，也称水果玉米。和普通玉米相比它具有甜、糯、嫩、香等特点。从品质上分有甜玉米、超甜玉米、甜糯玉米等；从籽粒颜色上分有黑色、紫色、黄色、白色等。随着人民生活水平的提高，市场对鲜食玉米的需求也越来越大，其保鲜与加工就显得尤为重要。由于鲜食玉米食用部分为未成熟的幼嫩果粒，采后呼吸代谢旺盛，糖分转化快，且容易失水变质，所以很难作长期贮藏，如想长时间贮藏或周年供应市场，须进行速冻保鲜或真空包装。
