谷氨酸，又称麸氨酸，是一种酸性氨基酸。分子内含两个羧基，化学名称为α-氨基戊二酸。谷氨酸是里索逊1856年发现的，为无色晶体，有鲜味，微溶于水，而溶于盐酸溶液，等电点3.22。谷氨酸大量存在于谷类蛋白质中，动物脑中含量也较多。谷氨酸在生物体内的蛋白质代谢过程中占重要地位，参与动物、植物和微生物中的许多重要化学反应。味精中含少量谷氨酸。
