汤子的面是怎么做出来的呢?它的做法是把玉米在水里浸泡30到40天左右,期间需要每隔4到5天换水一次,这样泡制的汤子面更有韧性,也更滑顺。之后用磨磨成水面,再用细纹布袋将水面里的粗渣子过滤掉,然后把过滤后剩下的细面放在缸里进行发酵,到有点酸味的时候捞出来,就变成汤面了。
