"It's like a piece of memory, " says Marina Garcia Burgos, a Lima-based photographer who was inspired to initiate the project with two colleagues while working in Ayacucho.
"I would describe it as a combination of two great languages to create a new expression that is richer than just speaking English or Spanish, " says Cristina Burgos, who last year decided to write a blog in Spanglish.
The staff - and most of the diners - are dressed in black-and-white in sympathy, and it's probably no accident that by far the most popular of the 80 immaculately presented tortillas on the menu is the colour-coded morcilla de arroz de Burgos: black sausage and white rice.
